Join us for an unforgettable beach trip to Celestún, a unique gathering that caps off the 66th Annual Convention of the Parapsychological Association. This event offers a chance to relax and soak in the stunning beauty of Mexico's coastlines. After days filled with innovative discussions on psi and experimental research, we can't think of a better way to conclude our journey than by enjoying a feast at the Poseidon Restaurant, right on the beach, accompanied by refreshing drinks!

Buffet Dinner
Immerse yourself in the flavors of Yucatán with a dinner buffet style with seasonal refill drinks (horchata, Jamaica, chaya with pineapple). The buffet will include:
- Starters for sharing:
- Guacamole.
- Sikil pak (traditional and authentic Yucatecan thick sauce prepared with tomato, habanero chili, cilantro, garlic, chives, salt, and a variety of pumpkin seed).
- Regional Buffet:
- Cotzitos (corn tortilla confit rolled, bathed in tomato sauce and white sopero cheese).
- Polcanes (nixtamal corn fry mixed with chaya leaf, accompanied by tomato sauce and habanero chilies).
- Cambray potatoes sautéed in olive oil and dry chilies (not spicy).
- Pico de gallo (traditional mix of cilantro, tomato, and onion to accompany different dishes).
- Cochinita pibil (oven-baked pork cooked in underground pibil technique, with regional spices).
- Chalupitas (nixtamal corn fry mixed with chaya leaf, hard-boiled egg, and pumpkin seed, accompanied by red sauces and habanero chili sauce).
- Horoches with ground beef (bean soup with nixtamal corn balls filled with meat), accompanied by tomato sauce.
- Horoches with fish (bean soup with nixtamal corn balls filled with fish), in tomato sauce.
- Grilled fish fillet (accompanied with different sauces to choose from, garlic, diabla, fine herbs, almond).
- Lentil ceviche (fresh mix of red onions, tomatoes, arbol chilies, lentils, avocado, and fresh cilantro; served with corn tostadas).
- Desserts:
- Coconut Napolitano with grated Edam cheese (Dutch-type cheese).
- Papaya sweet with grated Edam cheese.

Located at the foot of the sea, Poseidon Restaurant offers direct access to the beach, providing a serene retreat mere 5 minutes away from the center of Celestun. We will provide a great ambience filled with music with a pool, and the whole restaurant, reserved for the closure of this great event. Don't miss it!
